Fresh Herbs in Ice

There is nothing like fresh herbs to wake up a winter dish.  The flavor, the color and the texture of real herbs is so different than the dried varieties.  Parsley is one of my favorites for hearty winter soups.  To make it easy to use (and to save myself a trip to the store or out to the garden in the pouring rain) I like to wash and chop parsley and then freeze it in ice cube trays.  When it is time to make a quick weeknight soup I can just melt a cube into the pot!
